2 AA Rosette restaurant in Brighton
GB1 brings a touch of playfulness to any mealtime. This 2AA Rosette restaurant developed by Executive Chef Alan White and his passionate brigade offers a contemporary vibe which steps sensitively away from the hotel’s historic character and Regency architecture. Centred around it’s raised bar built between the original columns of the building and topped off with a striking central chandelier, a selection of booth style seating awaits.
The adjoining terrace area provides the perfect seafront backdrop to while away a long afternoon or evening. Alongside vegan and vegetarian dishes, the freshly caught South coast seafood (lobster, skate, sea bass and much more) couple perfectly with Wagyu beef, Sussex steaks and Southdown rumps.
Most Grand mornings start with a Grand breakfast. If you’re staying with us, you’ll enjoy a complimentary array of continental and hot breakfast favourites. Or, choose a surprisingly generous dish from our a la carte breakfast menu, and wash it down with a GB1 sunrise breakfast cocktail (non-alcoholic!), or even a Bloody Mary; before braving Brighton seafront from the best launch pad in the city.
From Monday to Saturday, you can experience our seasonal mid week menu. Our best value tasting experience comes in a perfectly formed two or three course bundle. And of course, our full a la carte menu is still available for a properly indulgent feast.
We can do traditional too. Or, why not buck the trend again and opt for a fish dish? Who says you can’t have a smoked haddock kedgeree scotch egg, aged sirloin of beef and Yorkshires, followed by Aribica coffee custard. Not us!
Seafood Afternoon Tea
A deliciously different way to while away an afternoon, our flagship seafood afternoon tea is a dream. Comprising of seafood such as fresh crab, treacle-cured salmon, Poole Bay oysters and Keta caviar, this tea is undoubtedly one of a kind and is a delicious alternative to the traditional afternoon tea experience.
You don’t have to venture far to find one of Brighton’s best nighttime haunts. GB1 truly comes alive under the stars where our passionate team craft a selection of the best vegan, seafood and quality meat delights, all in a relaxed yet unique dining arena. Oysters and caviar sit seamlessly alongside a menu packed with heritage vegetables, locally sourced ingredients and the catch of the day. Leave room for dessert, because you don’t want to miss the beautifully designed delights, not to mention the cheeseboard.

Executive Chef, Alan White's luxury dining menus offer a high-end and exclusive dining experience. Complementing GB1, the six menus adopt use locally sourced and seasonal ingredients, making them a celebration of Sussex. Wine pairing is also available.
Private dining is available from 14 to 20 guests. Numbers are restricted for some of the smaller rooms. Other private dining menus and options for larger group sizes are available. Groups of 14 and under can also dine in GB1 together. Please contact the team to discuss your individual requirements.

Alan White is the Executive Chef at The Grand Brighton, where he has been directing the 2 AA Rosette GB1 restaurant, lounge, terrace and bar - including an award-winning afternoon tea - and banqueting menus for up to 650 guests, for over 14 years.
Katerina is the Restaurant Host at The Grand Brighton and has been working here for 3 years. She absolutely loves her job as it gives her a platform to get to know our guests. She has the biggest smile and will ensure you leave having had the greatest experience!
Pedro is our Restaurant Manager and has been leading GB1 for the past year. He has huge passion when it comes to food and beverage, which is infectious amongst the team. He loves building relationships with our valued guests over a fantastic dining experience.
